Kick Butt

So I'm glad I plowed through last week's WW meeting because this week's was SO MUCH FUN.

But today I'm here to talk about the delicious and unbelievably healthy dinner I made tonight.  Chef Sarah?

Veggie Beef Stir Fry
Ingredients:

  • Lots of whatever veg you want, I did mushrooms, and zucchini, but broccoli would probably be awesome as well
  • 4 oz filet mignon
  • marinade of soy sauce, honey, canola oil, and red pepper flakes, crushed garlic
  • green onion
Cut the beef into tiny pieces and put into the marinade.

Cook the big veggies in a non stick cook pan with spray, once they're starting to look a little bit cooked add the green onion, stir, and then add the beef and marinade.  Beef will cook pretty quickly.

Serve over noodles or rice (hopefully brown or something low cal!) and garnish with a bit of chopped green onion.

Once you become self-conscious, there is no end to it; once you start to doubt, there is no room for anything else.

I took over the 930 am Weight Watchers meeting today.  I was awkward, not myself, quiet, and totally heard crickets the entire time.  For whatever reason all I can do in these situations is dwell and beat myself up.  I wish I could write and say something inspiring in my blog, but I seriously feel like such an uber loser today.  Just waiting for a voice to say 'calm down you can do this'. Either that or someone to be realistic and say 'who the heck are you kidding'.

The Big Weigh-In

Ugh I'm up 8.8 lbs since I ran the marathon.  Remo is about to take a 5 week long work trip to Portland again, he'll be home on weekends. I'm going to use the time I'd normally spend making big dinners at the gym and make fun healthy food I know he'd never touch with a 10 foot pole.  We counted down to New Years at WW on Saturday and rather than wait until Monday to start my week I started Saturday.  Back to goal I go!

People are so worried about what they eat between Christmas and the New Year, but they really should be worried about what they eat between the New Year and Christmas.

So I'm trying to figure this out... a tiny 6.4 oz sweet potato is 5 PointsPlus... 118 grams (1 serving) of white wine is 3 PointsPlus.  I think I'll have chicken, fruit and white for dinner!  Merci Beaucoup.

I think housework is the reason most women go to the office

So I haven't officially worked out today.  But I did do some major housework- I cleaned the second bedroom.  We moved in in October and I FINALLY unpacked the final boxes and organized what was once a junk room.  I think finding the motivation to do housework is a lot like motivation to exercise.   I wonder if anyone has seen a correlation between housework and weight management....

I always break for food :)

Lunch today was delicious and filling - I made myself a Whole Wheat Spaghetti Egg White Frittata:

1 oz Whole Wheat Spaghetti - boiled for 10 minutes
1 Egg
3 Egg Whites
Diced Onions and Red Pepper
Salt and Pepper
Parmesan Cheese
Steamed Broccoli

Cook until brown and mostly solid, flip and cook some more, sprinkle with cheese and broccoli

7 PointsPlus

I heart Rachael Ray

But she's not the healthiest of chefs.  I'm going to try to healtify and make smaller portions of this recipe:

Rice Pilaf with Chroizo Casserole

If only broccoli smelled as good as bacon...

So I've never really considered myself a good writer.  And this blog is ever so slightly selfish, but I'm basically on a mission to drop my WeightWatchers Goal weight down.  Now that I'm not training for a marathon any longer, I feel just as hungry.  Okay, maybe it's not genuine hunger, but who can tell the difference anyways?  As a WeightWatchers life time member and leader, you'd think I'd be cured by now.  Unfortunately there's no cure.  As I ambitiously tackle a new year with a corporate career and a new mini career leading Saturday morning WWs meetings, feel free to join me on my journey, I hope others can learn a new trick or two along with me!
