Veggie Beef Stir Fry
Ingredients:
- Lots of whatever veg you want, I did mushrooms, and zucchini, but broccoli would probably be awesome as well
- 4 oz filet mignon
- marinade of soy sauce, honey, canola oil, and red pepper flakes, crushed garlic
- green onion
Cut the beef into tiny pieces and put into the marinade.
Cook the big veggies in a non stick cook pan with spray, once they're starting to look a little bit cooked add the green onion, stir, and then add the beef and marinade. Beef will cook pretty quickly.
Serve over noodles or rice (hopefully brown or something low cal!) and garnish with a bit of chopped green onion.
